Stuffed Borekas

If you ever walked through the streets of israel, you know that borekas are a typical snack. You can find it stuffed with literally anything, from dairy to meat to all the middle eastern toppings.
For Yom Haatsmaut, I had to showcase these borekas because the mix of toppings makes it a total flavor bomb. Plus it’s the easiest to prepare!

1 kg rolled out puff pastry
Egg, beaten
Sesame seeds
Zaatar
Cherry tomatoes
Hard boiled eggs
Garlic confit
Kalamata olives
Crumbled Feta cheese
Hot honey (2 parts honey for 1 part sriracha)
DIRECTIONS:
Preheat oven to 350 F. Line a baking sheet with parchment paper.
Cut your pastry dough in squares. Fold each one into a pocket triangle.
Place on baking sheet and brush egg on each one. Sprinkle sesame seeds and zaatar.
Bake for 30 minutes, or until golden.
Slightly let cool then stuff.
Prepare your toppings:
Fire roasted tomatoes: broil your cherry tomatoes on a baking sheet, in a single layer until burnt tops form.
Garlic confit: peeled garlic in a small baking dish, covered with olive oil. Bake at 350, covered for 45-60 minutes.
