La Soupe de Fèves

This soup is a staple in so many moroccan homes.


Fava bean soup is like a big hug in a bowl, the hug you need after eating so much matsa at the seder.


Its wholesome, filling and comforting. You need a bowl!!

  • 1/4 cup oil

  • 3 carrots, peeled and finely diced

  • 5 celery sticks, peeled and finely diced

  • 1 onion, finely diced

  • 1 tbsp tomato paste

  • 2 potatoes, peeled and finely diced

  • 2 packs frozen Fava beans

  • 6.5 cup chicken broth

  • 1 tsp turmeric

  • 1 tbsp salt

  • 1/2 tsp black pepper

  • 1/2 lemon, juiced

  • 2 cups chopped cilantro, divided



DIRECTIONS:


  1. Start by chopping and preparing all your vegetables. If using fava beans with shell, take some time to shell them.

  2. Heat a large pot to medium high heat. Add oil. Place your carrots, celery, and onion inside the pot and let them sweat.

  3. After a couple of minutes, add your tomato paste and potatoes. Finally add your fava beans and mix everything together.

  4. Add broth, spices, and 1 cup of cilantro and mix everything in.

  5. Bring to a boil and then simmer for about 1.5 hour.

  6. Using an immersion blender, blend but not fully, so that some of the texture of the vegetables can remain.

  7. Top with remaining cilantro and adjust salt level.
