Pistachio Pesto Branzino

A fish that can be thrown together in minutes and that satisfies a healthy dinner request.
Branzino has such a buttery, melt-in-your-mouth texture. And paired with this pistachio pesto, it’s really taken over the top!!

FISH:
1 whole branzino, cut in 2 filets
Olive oil
Salt
Pepper
Lemon slices
PISTACHIO PESTO:
1/3 cup roasted shelled pistachios
1 cup parsley leaves, finely chopped
Zest of a lemon
2 garlic cloves, minced
2 tbsp olive oil
1.5 tsp salt
1 tsp pepper
DIRECTIONS:
1. Start by preheating your oven to 425.
2. Prepare a baking dish with the Branzino in it. Drizzle olive oil and sprinkle salt and pepper. Place a few lemon slices directly on the fish.
3. Place in the oven for 16-18 minutes.
4. While the fish cooks, prepare your pesto by grinding the pistachios first in a mini chopper.
5. Add the nuts to a mixing bowl along with all other ingredients. Mix very well.
6. Once ready to serve, spread pistachio pesto over the fish.
