Puff pastry
For meat mixture
1 lb medium ground beef
1 tsp paprika
1 tsp salt
1/2 tsp onion powder
1/2 tsp garlic powder
1/4 tsp nutmeg
1/4 tsp black pepper
For deli
1 tbsp neutral oil
12 oz Chopped deli (we used a mix of smoked meat and turkey pastrami)
For mushroom sauce
24 oz mushrooms, sliced
1 onion, finely diced
1 tbsp onion soup mix
3/4 cup water or broth
1 tsp salt
DIRECTIONS:
Start by rolling out puff pastry to 1/8” thickness. Cut into squares approximately 4” x 4”
Spray muffin pan generously with oil spray and place one square of puff pastry into each hole. Use a fork to poke holes in bottom, to prevent pastry from puffing up too much.
Bake at 375 for 10 minutes. (They will be par-baked at this point, but will bake again with meat mixture)
While puff pastry cups are baking, make meat mixture. Cook ground beef in pan using a potato masher to break apart meat.
Add all the spices and cook for 5-6 minutes until cooked through. Set aside.
In another pan, sauté chopped deli with oil until edges are slightly caramelized.
To assemble, place a heaping tablespoon of meat mixture into each puff pastry cup. Then top with a heaping tablespoon of deli mixture.
Bake at 375 for 10 minutes.
For mushroom sauce:
Sauté onion and mushrooms in oil until edges are caramelized and no liquid remains.
Season with onion soup mix and salt and deglaze with water or broth.
Cook for a few minutes to thicken sauce.
Serve alongside puff pastry cups.
