deli

  • Puff pastry

For meat mixture

  • 1 lb medium ground beef

  • 1 tsp paprika

  • 1 tsp salt

  • 1/2 tsp onion powder

  • 1/2 tsp garlic powder

  • 1/4 tsp nutmeg

  • 1/4 tsp black pepper

For deli

  • 1 tbsp neutral oil

  • 12 oz Chopped deli (we used a mix of smoked meat and turkey pastrami)

For mushroom sauce

  • 24 oz mushrooms, sliced

  • 1 onion, finely diced

  • 1 tbsp onion soup mix

  • 3/4 cup water or broth

  • 1 tsp salt

DIRECTIONS:

  1. Start by rolling out puff pastry to 1/8” thickness. Cut into squares approximately 4” x 4”

  2. Spray muffin pan generously with oil spray and place one square of puff pastry into each hole. Use a fork to poke holes in bottom, to prevent pastry from puffing up too much.

  3. Bake at 375 for 10 minutes. (They will be par-baked at this point, but will bake again with meat mixture)

  4. While puff pastry cups are baking, make meat mixture. Cook ground beef in pan using a potato masher to break apart meat.

  5. Add all the spices and cook for 5-6 minutes until cooked through. Set aside.

  6. In another pan, sauté chopped deli with oil until edges are slightly caramelized.

  7. To assemble, place a heaping tablespoon of meat mixture into each puff pastry cup. Then top with a heaping tablespoon of deli mixture.

  8. Bake at 375 for 10 minutes.

For mushroom sauce:

  1. Sauté onion and mushrooms in oil until edges are caramelized and no liquid remains.

  2. Season with onion soup mix and salt and deglaze with water or broth.

  3. Cook for a few minutes to thicken sauce.

  4. Serve alongside puff pastry cups.
