Mishte Series: French Onion Rice

Not your typical rice side dish…


Day 4 in our Purim Mishte series and we’re bringing you this French onion rice that is sure to impress.


Loaded with tons and tons of caramelized onions, the flavours in this side dish are off the charts!

  • 5lb yellow onions, peeled and sliced in thin half moons (use a mandolin to facilitate this process)

  • 2 tbsp oil

  • 2 cups basmati rice

  • 4 cups water

  • 2 tbsp onion soup mix

  • 2 tbsp soy sauce

  • 2 tsp salt

  • 1 tbsp oil



DIRECTIONS:


  1. Start by sautéing onions in oil until deeply caramelized. Be patient. This takes a while…

  2. Once onions are caramelized, in a separate pot, add rice, water, onion soup mix, soy sauce and oil. Add in half of the caramelized onions. Mix well and bring to a boil.

  3. Once it comes to a gentle boil, reduce heat to lowest setting, cover and cook until water is fully absorbed and rice is cooked.

  4. Once cooked, transfer rice to oven safe baking dish, smoothing the top so it’s flat. Spread remaining half of caramelized onions in an even layer.

  5. Bake at 400°F for 15 minutes. The tops will crisp up a little and onions will melt in your mouth.
