Mishte Series: Dubai Inspired Molten Lava Cake

Dubai chocolate + molten lava = 💥 💣
Finishing off with a bang, we saved the best for last.
To end our Purim Mishte series, we made these Dubai inspired molten lava cakes that are sure to impress.
Stuffed with homemade pistachio cream and topped with ganache, pistachios and kataifi - this chocolate dessert is the perfect end to an incredible meal.

Makes 9-10 8oz ramekins
Chocolate batter:
1-9oz bag semi sweet chocolate chips
1/2 cup margarine (1 stick)
3 eggs
2 yolks
1/2 cup sugar
1/4 cup flour
Pinch salt
Pistachio cream:
1 cup salted pistachios
3 tbsp oil
1/4 cup confectioners sugar
1 tsp vanilla extract
Chocolate Ganache:
1/2 cup whipping cream
1/2 cup chocolate chips
Pistachios, chopped
1/2 cup kataifi, toasted
(To toast - sauté in a dry pan mixing consistently until evenly golden)
DIRECTIONS:
Preheat oven to 375°F.
To make pistachio cream: Blend all ingredients in high powered blender until smooth. You will need to scrape down the sides a few times. Set aside.
To make chocolate batter: In a microwave safe bowl (or in a pot) melt margarine with chocolate chips.
In the bowl of a mixer, beat eggs with egg yolks and sugar until smooth. (You can also use a bowl and a whisk)
Add melted chocolate mixture and mix until smooth. Then add in flour and salt.
Let sit for 10-15 minutes for batter to thicken slightly.
Spray ramekins generously with oil and scoop HALF the batter evenly in all the ramekins.
Place a heaping tablespoon of pistachio cream in center of each chocolate cake. Top with remaining chocolate batter, splitting evenly over each ramekin.
Bake for 10-12 minutes. You want edges to be firm, and center to be just barely set.
(You can also prepare in advance and keep in fridge until ready to use. Just bring to room temp and proceed with same instructions)
While cakes bake, make ganache by heating cream until very hot in a microwave or pot. Once hot, remove from heat, add chocolate chips and mix until smooth.
Once cakes are ready, drizzle with ganache and top with toasted kataifi and chopped pistachios.
