Mozza & Pesto Pasta Salad

If you love bold, zesty flavors, this pasta salad is your new go-to!


It’s packed with creamy mozzarella pearls, punchy jalapenos, and a sun-dried tomato pesto that totally steals the show.



pasta

  • 375 g tricolor rotini pasta (or any pasta of choice)

  • Handful of arugula

  • 7-8 cherry tomatoes, minced

  • 1 small red onion, minced

  • 2 tbsp marinated jalapeno, minced

  • 7-8 green olives, minced

  • Salt

  • 1/2 lemon, juiced

  • As many mozzarella pearls as you like



Red pesto


  • 1 tbsp sun-dried tomatoes

  • 1 tbsp pine nuts

  • A handful of basil (about 2 tbsp chopped)

  • 2 tbsp olive oil, divided



DIRECTIONS:


  1. Start by boiling pasta according to package directions in salty water. Drain and set aside in a bowl.

  2. At the same time, blend pesto in small chopper with 1 tbsp of olive oil. Add another tbsp only once blended.

  3. Top pasta with arugula, tomatoes, jalapeno, olives, lemon, salt, mozzarella pearls and pesto.

  4. Mix well until pesto covers all the pasta.
