Miso Carrots

Simple, last minute side dish for a meat/chicken/fish dish, prepared in minutes!
And I bought those medium size carrots from Costco in a pre-peeled pack which made it so time saving and convenient. Love finding products that make my life easier.

- 12-15 medium size carrots 
- 2 tbsp miso 
- 2 tbsp soy sauce 
- 2 tbsp maple syrup 
- 2 tbsp grapeseed oil 
- 1/2 lime, juiced 
- Black pepper 
DIRECTIONS:
- Preheat oven to 400F. Line a baking sheet with parchment paper. 
- Lay carrots on a single layer on a baking sheet. 
- Whisk together marinade. Pour all over carrots and mix. 
- Roast for 25 minutes or until golden.
