Deli Smashed Potatoes

Your purim appetizer for this year.


A smashed potato topped with fried onion and deli. A savory dream!!!

  • 2 package deli meat (I use smoked meat and turkey)

  • 1 onion, sliced

  • 2 tbsp oil

  • 2 cloves garlic, crushed

  • 1/2 tsp each granulated garlic, oregano, crushed red pepper flakes

  • 1 tsp salt

  • 1/4 tsp black pepper

  • 2 lb mini potatoes

  • Olive oil

  • Fresh chives, to top



DIRECTIONS:


  1. Preheat oven to 400F.

  2. Boil your potatoes in a pot of water until fork tender. Drain and set aside.

  3. While the potatoes boil, prepare your deli: slice your onion and cube your deli meat.

  4. Heat a pan to medium high heat. Add oil. Add onion and fry until translucent. Add deli and fry until a few dark bits start to form. Add garlic and spices. The deli is ready when caramelized and starts to stick to the bottom of the pan.

  5. Using a real baking sheet, drizzle a thin layer of olive oil. Brush it so it is evenly coated. Place potatoes on it and using the bottom of a cup (sprayed with oil) smash each potato until flat.

  6. Top each one with about 1 tbsp of deli mixture.

  7. Place in the oven and bake for 25-30 minutes. I like mine with burnt bits because it adds to the texture.

  8. Top with fresh chopped chives before serving.
