Chocolate Quinoa Passover Treat

Crunchy, chocolatey, and comes together in minutes, with just a handful of simple ingredients.

INGREDIENTS:
• 1 cup quinoa
• 1 ½ cups chocolate chips
• ¼ cup almond butter
• 1 tsp vanilla
• Pinch of salt
• 2 tbsp honey
DIRECTIONS:
1. Toast the quinoa in a dry pan over medium heat, stirring constantly until it starts popping. Once the popping slows, remove from heat and set aside.
2. Melt the chocolate chips with the almond butter in the microwave (30-second increments, stirring in between) until smooth.
3. In a bowl, combine the popped quinoa with the melted chocolate mixture.
4. Add honey, vanilla, and salt, then mix well. Work quickly as it will start to set.
5. Transfer to a greased dish and press evenly into the pan.
6. Refrigerate until firm, then slice into bars or squares.
