BBQ Salmon Boats Dinner

Summer is all about spending more time outdoors and less time in the kitchen.
So for that, I’m hooking you up with a dinner fully on the BBQ that comes together in minutes and dirties nothing in your kitchen.

2 russet potatoes
2 salmon slices
Fresh green beans
Cherry tomatoes
Lemon wedges
Olive oil drizzle
Herbamare (herbed salt)
Crushed red pepper flakes
Sumac
Granulated garlic
Salt and Black pepper
Caesar dressing, or your favorite
DIRECTIONS:
1. Preheat your BBQ to a medium flame.
2. Wrap your potatoes in foil and place directly on the BBQ. They will stay there for 25-30 minutes, or until a knife can slide through easily.
3. Prepare your parchment paper boats: using a large rectangular size parchment, fold like an accordion then secure on either sides. You can use kitchen twine to help or not.
4. Open up your boats and place them in a 9x13 dish to prevent them from opening.
5. Layer a handful of green beans then salmon on top, about 3-4 cherry tomatoes on the side and a quarter lemon as well. Drizzle olive oil, then sprinkle all spices.
6. Place the whole dish directly on the BBQ and cover. Let it cook for 15-17 minutes.
7. Once potato is ready, slice open and sprinkle salt. Drizzle your favorite dressing on it. Slice salmon boat onto plate and squeeze lemon.
