Preserved Lemon Salmon with Mango Salsa Topping

If you’re still looking for the quickest fish dish to serve on the holiday, here it is!
Super simple, fresh and ready in minutes!

1/2 large salmon filet
1/2 of a full preserved lemon, flesh removed
3 cloves garlic
1/4 cup cilantro
1/4 tsp oregano
2 tbsp olive oil
Salt and pepper, to taste
DIRECTIONS:
Preheat oven to 425 F. Prepare your salmon in a baking dish. I like to cut slits horizontally in the thickest parts of the fish so it can cook more evenly and the flavour can penetrate.
In a mini food processor, mince preserved lemon, garlic, cilantro. Transfer to a small mixing bowl.
Add oil and spices. Mix together. Brush fish everywhere with the mixture.
Bake for 18 minutes. Top with salsa topping before serving!
Salsa topping:
1 ataulfo mango, finely diced
A few grape tomatoes, finely diced
1/4 of a fresh red bell pepper, finely diced
1/2 red onion, finely diced
1/4 cup Cilantro, minced
Olive oil, fresh lemon juice, salt and pepper
Toss everything together
