Pasta Arrabbiata

Arrabbiata sauce is becoming my number 1 sauce on pasta. Totally obsessed with how my mouth feels when I have a bowl.
The spiciness of it is so addictive that you keep wanting more and more. It is insanely good!
Such a different vibe than the typical pasta sauces. Simple but so so good!!

750g pasta of choice
3 tbsp oil
1 shallot, finely diced
3 garlic cloves, crushed
2 tbsp tomato paste
796ml canned crushed tomatoes
1/2 cup sliced kalamata olives
1 tbsp sugar
1/2 tsp dried basil
1/2 tsp dried oregano
1/2 tbsp crushed red pepper flakes
Salt, to taste
1/2 cup pasta water
DIRECTIONS:
1. Start by boiling pasta, according to package directions.
2. Heat a pan to medium high heat. Add oil. Sauté shallot until translucent. Add garlic and tomato paste and saute until fragrant. Reduce heat to a simmer and add crushed tomatoes. Cover and let it cook for 2 to 3 minutes.
3. Add sliced Kalamata olives, spices and pasta water. Mix everything together and let it cook for about 10 minutes covered.
4. Once pasta is ready, drain and mix in with the sauce.
