Herbed Beet Slaw with Pomegranate

Here’s your salad recipe for this Shavuot.


Fresh salads are not my favorite to make. So if there’s a fresh salad here, you know it’s a good one.


Raw beets are super underrated but SO good. Be the one to try!



beet slaw

  • 1 large beet, peeled

  • 1 shallot

  • 2 tbsp chives and dill (plus more to top)

  • 1 tsp salt

  • 1/4 cup olive oil

  • 2 tbsp apple cider vinegar (or lemon if you prefer)

  • Pinch black pepper

  • 2 tbsp pomegranate


DIRECTIONS:


1. Shred the beet completely. Place in a mixing bowl.

2. Mince shallot, chives and dill. Mix all dressing ingredients together.

3. Toss salad with dressing. Top with pomegranate and more herbs if you like.
