Green Summer Halloumi Salad

A salad that was born from a thought that turned into a dream that turned into reality.


Sounds dramatic but make it, then you’ll understand the joy 🙌🏻

  • 1 cup arugula, chopped

  • 1 cup strawberries, chopped

  • 1 peach, diced

  • 1 avocado, diced

  • 1/3 of a full red onion, minced

  • 1 cup diced halloumi

  • 2 tbsp silan

  • 3 tbsp olive oil

  • 2 tbsp toasted sliced almonds



Dressing:

  • 1/2 cup cilantro

  • 1/4 cup mint

  • 1 lime, juiced

  • 1/4 cup olive oil

  • 1 tsp dijon mustard

  • 1 tsp salt

  • Black pepper



DIRECTIONS:


1. Start by blending all your sauce ingredients in a tall jar until blended. Set aside.

2. In a medium size mixing bowl, combine arugula, strawberries, peach, avocado and red onion.

3. Toss your halloumi with silan then heat a pan to medium high heat. Add olive oil then halloumi. Fry on all sides until golden. Remove and set aside to cool down.

4. Add your halloumi to the salad. Top with almonds and dressing. Mix everything until well coated.
